Jalapeno-Lime Vinaigrette Slaw

As I have mentioned before, I love citrus. I cook with it always. It just adds that extra pop everything needs. For this slaw I made a Jalapeno-Lime Vinaigrette which is the perfect spicy-zesty pop the Tangy Pulled Pork needs. This slaw honestly goes great on the side of any summer dish.
You will need:
- 1/2 Red Cabbage
- 1/2 Green Cabbage
- 1 bunch cilantro
- 2 Jalapenos
- 3 Limes
- 1 Carrot
- Extra virgin olive oil
- Kosher Salt
Cut the cabbage into thin strands, and toss together in a bowl to create a mix of these beautiful colors. Peel the carrot, and grate to add more beautiful color to our bowl. Now I take 1/2 of the cilantro and pull the leaves off of the bunch. Toss again.
Here is where it gets fun. Take the seeds out of the jalapenos and cut into chunks. Add to a tall measuring cup. Follow along with the other half of the cilantro bunch. the juice of three limes, and a pinch of salt. Now take an immersion blender and blend everything up. I like this one by Cuisinart. It comes with extra accessories and is cordless! Add extra virgin olive oil to loosen everything up more. When the vinaigrette is fully blended and ready to eat, pour the Jalapeno-Lime Vinaigrette over the beautiful cabbage mix and toss! YUM! Serve on a sandwich with my Tangy Pulled Pork, and Tangy Barbecue sauce.
Jalapeno-Lime Vinaigrette Slaw
You will need:
- 1/2 Red Cabbage
- 1/2 Green Cabbage
- 1 bunch cilantro
- 2 Jalapenos
- 3 Limes
- 1 Carrot
- Extra virgin olive oil
- Kosher Salt
- Cut the red and green cabbage into long strands, and toss together.
- Peel the carrot and grate. Add to the bowl.
- Pull all the leaves off 1/2 the cilantro bunch and add to the bowl. Toss.
- Remove the seeds from the jalapeno and cut into chunks. Add to a tall measuring cup you can stick an immersion blender into.
- Add the other half of cilantro, the juice of 3 limes, and a pinch of salt. Blend. Add extra virgin olive oil to loosen. Blend until smooth.
- Pour vinaigrette over the slaw. Toss.
- Serve with Tangy Pulled Pork, and my Tangy Barbecue Sauce.
