Street Corn

One of my favorite things about grilling season is the corn. It just tastes so good. Something about the char of the grill with the sweetness of the corn hits the spot every time. I love it. I try to make a different recipe each time, but I always come back to this sweet, spicy, & cheesy street corn. 

You Will Need:

  • 1 egg yolk
  • 1/4 cup cilantro rough chop
  • 2 jalapenos seeded
  • 1 clove garlic
  • zest and juice of 2 limes
  • 1 cup vegetable oil, plus more for corn
  • paprika
  • cotija cheese
  • 6-10 pieces of corn

Preheat the grill to a high heat. Remove the husks off the corn. I like to place the corn directly on to the grill to give it a really nice char. I think it looks so pretty and tastes phenomenal.

While the grill is preheating, add egg yolk, cilantro, jalapeños, garlic, lime zest, and lime juice. Blend this up as much as you can. I like to use an immersion blender. They are easy to take around the kitchen, and are easy to clean. I have a cordless one from Cuisinart and I love it, it is easily portable and comes with a whisk and chopper attachment. As you blend these ingredients slowly add about 1 cup of oil until smooth and in a mayonnaise like consistency. Season with kosher salt to taste. Yum. This aioli is spicy and acidic. My two favorite things. Set the Jalapeno-Aioli to the side. Toss the corn with some vegetable oil and kosher salt. Place the corn on the grill and char all sides. Honestly, the more charred the better! While you are grilling, close the lid for around 5 minutes. That's it! Grilling corn is so easy, and so worth it. Remove the corn from the grill.

Take the Jalapeno Aioli and spread it onto the corn. Sprinkle with paprika, and crumble the cotija on top. Serve with a lime wedge. Enjoy!

Street Corn

You Will Need:

  • 1 egg yolk

  • 2 jalapenos seeded
  • 1 clove garlic
  • zest and juice of 2 limes
  • 1 cup vegetable oil, plus more for corn
  • paprika
  • cotija cheese
  • 6-10 pieces of corn
  1. Preheat the grill.
  2. Take the Husk off of the corn.
  3. In a food processor, add the egg yolk, cilantro, jalapenos, garlic, lime zest, and lime juice.
  4. Blend together and slowly incorporate oil until you get a smooth consistency. Season with kosher salt to taste. Set aside.
  5. Cover the corn with oil and kosher salt.  
  6. Throw the corn on the grill and char on all sides.  
  7. Close lid for 5 minutes. Remove from grill.
  8. Layer the jalapeño aioli on the corn, followed by paprika, and crumbled Cotija. Serve with a lime wedge.
